I got this tasty recipe from a recipe book that they were passing out in one of the grocery stores here. It was a real winner around here, we might have had it 2-3 weeks in a row.
Chicken and Pineapple
boneless/skinless chicken (about 2 lbs, little less, the recipe is in metric so it says 900 grams
1 large chopped onion
1 red pepper chopped
1 green pepper chopped
2 shallots chopped
2 slices of ginger
2 1/4 cup coconut milk
1 3/4 cup chicken stock
250 grams of pineapple chunks
4 tbsp margarine
1/2 tsp pepper
1 tbsp dessicated coconut ( i never had this on hand)
salt to taste
1. heat margarine in a pan and add the onions. Stir fry until transparent. Add the red and green pepper and cook for 2 minutes.
2. Add the flour and ginger and cook for another minute. Now add the coconut milk and the chicken stock (i just made some from chicken buillion cube and water). Once it starts simmering, add the chicken and cook til chicken is tender. Add a little water if the stock is too thick. Add shallots.
3. Remove the ginger slices. Add the pepper powder if you wish and add salt if desired. Add the pineapple chunks. Garnish with chopped parsley and dessicated coconut.
